| Ingredients |
1 medium onion,sliced
1 medium green pepper, cut into strips
1 medium red pepper, cut into strips
1 tbp vegetable oil
grated peel and juice from 1 lime
1/2 txp ground cmin
1 envelope Shake-N-Bake extra crispy seasoned coating mix
4 boneless pork chops (4 oz each) 1/2 in thick
8 flour tortillas

| Instructions |
Preheat oven 425 degrees. Mix onions, peppers, oil, lime juice and cumin in 13x9x2 inch pan.
Mix coating mix and lime peel; use to coat chops as directed. Discard remaining coating mixture.
Place chops over vegetable mixture in baking pan.
Bake 25 minutes or until chops are cooked through. Remove chops from pan, cut into strips.
Spoon pork and vegetable mixture evenly over tortillas. roll-up.
Serve with salsa and sour cream.
