Ingredients
  • 1 stick butter
  • 2 pkg (10 oz) frozen chopped spinach, thawed and drained
  • 1can (14 oz) artichoke hearts, drained and chopped
  • 1 pkg (8 oz) cream cheese
  • 1 pkg (8 oz) sour cream
  • 1 cup chopped onion
  • 1 cup shreded monterey jack cheese
  • 1 cup grated parmesan cheese
  • corn chips or crackers
  • salt to taste
  • Instructions
  • Melt butter in large saucepan or skillet over medium heat
  • Add onions and cook until soft. about 5 minutes
  • Stir in spinach, artichokes, cream cheese, sour cream, 3/4 cup cheese, 3/4 cup parmesan cheese, and salt
  • Stir until well blended and heated throughly
  • Pour mixture into 1/2 quart casserole dish and top with remaining monterey jack cheese and parmesan cheese
  • Bake at 350 until cheese starts to brown (about 10 minutes). Serve with corn chips or crackers
