| Ingredients |
2 cups heavy cream
4 egg yolks
1/3 cup sugar
1 teaspoon vanilla
1/2 cup sugar for topping

| Instructions |
in small pot, heat cream over medium heat until hot but not boiling - small bubbles will appear along the edge of pot
whisk egg yolks, 1/3 cup sugar, and vanilla
When cream is hot, add it to the egg yolk mixture a little at a time, whisking well after each addition
Pour into 4 (7-8 oz ramekins)
place filled ramekins in large baking dish
fill baking dish with hot water so that is comes 3/4 way up the sides of the ramekins.
Bake at 325 degrees for 30-45 minutes.
Cool to room temperature and then refrigerate for at least 2 hours until chilled
Sprinkle each custard with 1 tablespoon of sugar, torch or broil until caramelized
serve immediately or chill to serve later
