Ingredients
  • 2 cups heavy cream
  • 4 egg yolks
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup sugar for topping
  • Instructions
  • in small pot, heat cream over medium heat until hot but not boiling - small bubbles will appear along the edge of pot
  • whisk egg yolks, 1/3 cup sugar, and vanilla
  • When cream is hot, add it to the egg yolk mixture a little at a time, whisking well after each addition
  • Pour into 4 (7-8 oz ramekins)
  • place filled ramekins in large baking dish
  • fill baking dish with hot water so that is comes 3/4 way up the sides of the ramekins.
  • Bake at 325 degrees for 30-45 minutes.
  • Cool to room temperature and then refrigerate for at least 2 hours until chilled
  • Sprinkle each custard with 1 tablespoon of sugar, torch or broil until caramelized
  • serve immediately or chill to serve later
