1 3/4 cup sugar
2 cup flour
1/2 tsp baking soda
1/2 tsp salt; 1 tsp lemon extract
1/2 cup vegetable oil
2 eggs (beaten)
2 (8 oz) crushed pineapples including juice (divided)
2 tsp vanilla extract

| Instructions |
Preheat oven at 325; measure 2 tbsp crushed pineapple for frosting; set aside
combine sugar, flour, baking soda, and salt in mixing bowl; add vegetable oil, eggs, pineapple, vanilla extract, and lemon extract
mix thoroughly; pour batter into a well greased and floured 17x11 jelly roll pan
Bake 25-30 minute or until toothpick inserted in center and comes out clean
remove from oven and immediately frost with coconut cream cheese frosting; cool completely
