  • 1 cup butter
  • 2 cup sugar
  • 1 tsp baking soda
  • pinch of salt
  • 2 tbsp butter
  • 2 1/3 cup pecans
  • Instructions
  • large (6-8 qts) kettle, combine 1st 4 ingredients (if using candy thermometer, set in place)
  • cook over high heat for 5 minutes or to 210 stirring frequently
  • Cook stirring continuously until a little mixture in cold water form a soft boil (about 5 minutes or 230)
  • Remove from heat; cool 1 to 2 minutes
  • with spoon, beat until thick and creamy; drop on wax paper by tsp
